Fettuccine Alfredo
Fresh fettuccine folded into a glossy emulsion of butter and Parmigiano-Reggiano.

Ingredients
- 1 lb fresh fettuccine
- 1 stick butter
- 1.5 cups Parmigiano, grated
- 1 cup pasta water
- Black pepper
- Pinch of nutmeg
- Salt
- Parsley to finish
Method
- 1 Cook the fettuccine in salted water until just shy of al dente.
- 2 Melt the butter in a wide pan with a ladle of pasta water.
- 3 Add the pasta and cheese and toss vigorously, adding water until a silky sauce forms.
- 4 Season with nutmeg and pepper and finish with parsley.
