Fettuccine Alfredo

Ingredients

  • 1 lb fresh fettuccine
  • 1 stick butter
  • 1.5 cups Parmigiano, grated
  • 1 cup pasta water
  • Black pepper
  • Pinch of nutmeg
  • Salt
  • Parsley to finish

Method

  1. 1 Cook the fettuccine in salted water until just shy of al dente.
  2. 2 Melt the butter in a wide pan with a ladle of pasta water.
  3. 3 Add the pasta and cheese and toss vigorously, adding water until a silky sauce forms.
  4. 4 Season with nutmeg and pepper and finish with parsley.
