Tacos al Pastor

Chili-marinated pork shaved off the spit, charred and piled with pineapple and cilantro.

Ingredients

  • 2 lb pork shoulder, sliced
  • 3 dried guajillo chiles
  • 1/2 cup pineapple
  • 2 tbsp achiote paste
  • 3 cloves garlic
  • Corn tortillas
  • White onion and cilantro
  • Lime wedges

Method

  1. 1 Blend the soaked chiles with achiote, garlic, and pineapple into a marinade.
  2. 2 Coat the pork and marinate at least four hours or overnight.
  3. 3 Sear the pork hard in a hot pan until charred at the edges, then chop.
  4. 4 Pile onto warm tortillas with pineapple, onion, cilantro, and lime.
