Tacos al Pastor
Chili-marinated pork shaved off the spit, charred and piled with pineapple and cilantro.

Ingredients
- 2 lb pork shoulder, sliced
- 3 dried guajillo chiles
- 1/2 cup pineapple
- 2 tbsp achiote paste
- 3 cloves garlic
- Corn tortillas
- White onion and cilantro
- Lime wedges
Method
- 1 Blend the soaked chiles with achiote, garlic, and pineapple into a marinade.
- 2 Coat the pork and marinate at least four hours or overnight.
- 3 Sear the pork hard in a hot pan until charred at the edges, then chop.
- 4 Pile onto warm tortillas with pineapple, onion, cilantro, and lime.
