Pork Carnitas
Slow-braised pork shoulder shredded and crisped until golden, juicy, and craggy.

Ingredients
- 3 lb pork shoulder
- 1 orange, halved
- 1 onion, quartered
- 4 cloves garlic
- 2 bay leaves
- 1 tbsp cumin
- 2 tsp oregano
- Lard or oil
Method
- 1 Season the pork and nestle it with onion, garlic, bay, and orange in a heavy pot.
- 2 Cover and braise at 300F for three hours until fork-tender.
- 3 Shred the meat and reduce the juices on the stovetop.
- 4 Crisp the pork under the broiler or in a hot pan until the edges turn golden.
