Ingredients

  • 3 lb pork shoulder
  • 1 orange, halved
  • 1 onion, quartered
  • 4 cloves garlic
  • 2 bay leaves
  • 1 tbsp cumin
  • 2 tsp oregano
  • Lard or oil

Method

  1. 1 Season the pork and nestle it with onion, garlic, bay, and orange in a heavy pot.
  2. 2 Cover and braise at 300F for three hours until fork-tender.
  3. 3 Shred the meat and reduce the juices on the stovetop.
  4. 4 Crisp the pork under the broiler or in a hot pan until the edges turn golden.
