Blackened Catfish
Cornmeal-dusted catfish fillets crusted in Cajun spice and seared until smoky and crisp.

Ingredients
- 4 catfish fillets
- 3 tbsp blackening spice
- 1/4 cup fine cornmeal
- 3 tbsp butter, melted
- 1 lemon, wedged
- 2 tbsp oil
- Salt
- Remoulade to serve
Method
- 1 Stir the blackening spice into the cornmeal and season the fillets all over.
- 2 Brush each fillet with melted butter and press into the spiced cornmeal.
- 3 Sear in a smoking-hot cast iron pan three minutes per side until the crust is deep brown.
- 4 Rest two minutes and serve with lemon wedges and a spoon of remoulade.
