Blackened Catfish

Cornmeal-dusted catfish fillets crusted in Cajun spice and seared until smoky and crisp.

Ingredients

  • 4 catfish fillets
  • 3 tbsp blackening spice
  • 1/4 cup fine cornmeal
  • 3 tbsp butter, melted
  • 1 lemon, wedged
  • 2 tbsp oil
  • Salt
  • Remoulade to serve

Method

  1. 1 Stir the blackening spice into the cornmeal and season the fillets all over.
  2. 2 Brush each fillet with melted butter and press into the spiced cornmeal.
  3. 3 Sear in a smoking-hot cast iron pan three minutes per side until the crust is deep brown.
  4. 4 Rest two minutes and serve with lemon wedges and a spoon of remoulade.
