Shrimp & Sausage Jambalaya
A one-pot rice braise stained red with tomato, smoky sausage, and Gulf shrimp.

Ingredients
- 1 lb shrimp
- 1 lb smoked sausage
- 2 cups long-grain rice
- 1 onion, bell pepper, celery
- 2 cups tomato
- 4 cups stock
- 2 tsp Cajun spice
- Green onion
Method
- 1 Brown the sausage, then soften the trinity in the drippings.
- 2 Stir in the rice, tomato, Cajun spice, and stock and bring to a boil.
- 3 Cover and simmer 20 minutes until the rice is nearly tender.
- 4 Fold in the shrimp, cook five minutes more, and finish with green onion.
