Shrimp & Sausage Jambalaya

Ingredients

  • 1 lb shrimp
  • 1 lb smoked sausage
  • 2 cups long-grain rice
  • 1 onion, bell pepper, celery
  • 2 cups tomato
  • 4 cups stock
  • 2 tsp Cajun spice
  • Green onion

Method

  1. 1 Brown the sausage, then soften the trinity in the drippings.
  2. 2 Stir in the rice, tomato, Cajun spice, and stock and bring to a boil.
  3. 3 Cover and simmer 20 minutes until the rice is nearly tender.
  4. 4 Fold in the shrimp, cook five minutes more, and finish with green onion.
