Ingredients

  • 1 lb dried red beans
  • 1 lb smoked sausage
  • 1 onion, bell pepper, celery
  • 3 cloves garlic
  • 2 bay leaves
  • 1 tsp thyme
  • Cooked rice
  • Hot sauce

Method

  1. 1 Soak the beans overnight, then drain.
  2. 2 Sweat the trinity and garlic, add beans, sausage, bay, and water to cover.
  3. 3 Simmer gently two hours until the beans are creamy, mashing some for body.
  4. 4 Season well and serve over rice with hot sauce.
