Red Beans & Rice
Creamy slow-cooked red beans with smoked sausage, ladled over fluffy white rice.

Ingredients
- 1 lb dried red beans
- 1 lb smoked sausage
- 1 onion, bell pepper, celery
- 3 cloves garlic
- 2 bay leaves
- 1 tsp thyme
- Cooked rice
- Hot sauce
Method
- 1 Soak the beans overnight, then drain.
- 2 Sweat the trinity and garlic, add beans, sausage, bay, and water to cover.
- 3 Simmer gently two hours until the beans are creamy, mashing some for body.
- 4 Season well and serve over rice with hot sauce.
