Ingredients

  • 1 whole chicken, cut up
  • 4 cups buttermilk
  • 3 cups flour
  • 2 tbsp paprika
  • 1 tbsp garlic powder
  • 2 tsp cayenne
  • Salt and pepper
  • Oil for frying

Method

  1. 1 Brine the chicken in seasoned buttermilk at least four hours.
  2. 2 Dredge in heavily seasoned flour, pressing in a craggy coat.
  3. 3 Fry at 325F, turning, for 15 to 18 minutes until 165F inside.
  4. 4 Rest on a rack so the crust stays shatteringly crisp.
