Buttermilk Fried Chicken
Brined chicken in a craggy, well-seasoned crust fried to deep golden crunch.

Ingredients
- 1 whole chicken, cut up
- 4 cups buttermilk
- 3 cups flour
- 2 tbsp paprika
- 1 tbsp garlic powder
- 2 tsp cayenne
- Salt and pepper
- Oil for frying
Method
- 1 Brine the chicken in seasoned buttermilk at least four hours.
- 2 Dredge in heavily seasoned flour, pressing in a craggy coat.
- 3 Fry at 325F, turning, for 15 to 18 minutes until 165F inside.
- 4 Rest on a rack so the crust stays shatteringly crisp.
