Sunday Pot Roast

Chuck roast braised low with carrots and potatoes until it shreds under a fork.

Ingredients

  • 4 lb chuck roast
  • 4 carrots, chunked
  • 1 lb potatoes
  • 2 onions
  • 4 cups beef stock
  • 3 tbsp tomato paste
  • 2 sprigs rosemary
  • Flour to dust

Method

  1. 1 Sear the floured roast hard on all sides in a Dutch oven.
  2. 2 Add onions and tomato paste, then deglaze with the stock.
  3. 3 Cover and braise at 300F for two and a half hours.
  4. 4 Add the vegetables for the last hour until everything is meltingly tender.
