Sunday Pot Roast
Chuck roast braised low with carrots and potatoes until it shreds under a fork.

Ingredients
- 4 lb chuck roast
- 4 carrots, chunked
- 1 lb potatoes
- 2 onions
- 4 cups beef stock
- 3 tbsp tomato paste
- 2 sprigs rosemary
- Flour to dust
Method
- 1 Sear the floured roast hard on all sides in a Dutch oven.
- 2 Add onions and tomato paste, then deglaze with the stock.
- 3 Cover and braise at 300F for two and a half hours.
- 4 Add the vegetables for the last hour until everything is meltingly tender.
