Pulled Pork Platter

Ingredients

  • 7 lb pork shoulder
  • 1/3 cup dry rub
  • 2 tbsp mustard
  • 1 cup vinegar sauce
  • 2 tbsp brown sugar
  • Buns and slaw
  • Pickles
  • Wood chunks

Method

  1. 1 Rub the shoulder and refrigerate overnight.
  2. 2 Smoke at 250F until the bark is set and the internal hits 165F.
  3. 3 Wrap and continue until 203F and probe-tender.
  4. 4 Rest one hour, pull, and toss with the finishing sauce.
