Pulled Pork Platter
Smoked pork shoulder pulled into glistening strands with a vinegar-pepper finishing sauce.

Ingredients
- 7 lb pork shoulder
- 1/3 cup dry rub
- 2 tbsp mustard
- 1 cup vinegar sauce
- 2 tbsp brown sugar
- Buns and slaw
- Pickles
- Wood chunks
Method
- 1 Rub the shoulder and refrigerate overnight.
- 2 Smoke at 250F until the bark is set and the internal hits 165F.
- 3 Wrap and continue until 203F and probe-tender.
- 4 Rest one hour, pull, and toss with the finishing sauce.
