Pad Thai
Rice noodles wok-tossed in tamarind sauce with shrimp, egg, peanuts, and lime.

Ingredients
- 8 oz rice noodles
- 1/2 lb shrimp
- 2 eggs
- 3 tbsp tamarind paste
- 2 tbsp fish sauce
- 2 tbsp palm sugar
- 1/2 cup peanuts
- Bean sprouts and lime
Method
- 1 Soak the noodles until pliable and whisk the tamarind sauce.
- 2 Stir-fry the shrimp, push aside, and scramble the eggs.
- 3 Add noodles and sauce and toss over high heat until glossy.
- 4 Finish with sprouts, crushed peanuts, and a squeeze of lime.
