Ingredients

  • 8 oz rice noodles
  • 1/2 lb shrimp
  • 2 eggs
  • 3 tbsp tamarind paste
  • 2 tbsp fish sauce
  • 2 tbsp palm sugar
  • 1/2 cup peanuts
  • Bean sprouts and lime

Method

  1. 1 Soak the noodles until pliable and whisk the tamarind sauce.
  2. 2 Stir-fry the shrimp, push aside, and scramble the eggs.
  3. 3 Add noodles and sauce and toss over high heat until glossy.
  4. 4 Finish with sprouts, crushed peanuts, and a squeeze of lime.
