Thai Green Curry

Ingredients

  • 1.5 lb chicken thighs
  • 3 tbsp green curry paste
  • 2 cans coconut milk
  • 1 cup bamboo shoots
  • 1 tbsp fish sauce
  • 1 tsp palm sugar
  • Thai basil
  • Jasmine rice

Method

  1. 1 Fry the curry paste in thick coconut cream until fragrant and split.
  2. 2 Add the chicken and coat, then pour in the remaining coconut milk.
  3. 3 Simmer with bamboo, fish sauce, and sugar until the chicken is tender.
  4. 4 Finish with Thai basil and serve over jasmine rice.
