Thai Green Curry
Coconut green curry simmered with chicken, bamboo, and Thai basil over jasmine rice.

Ingredients
- 1.5 lb chicken thighs
- 3 tbsp green curry paste
- 2 cans coconut milk
- 1 cup bamboo shoots
- 1 tbsp fish sauce
- 1 tsp palm sugar
- Thai basil
- Jasmine rice
Method
- 1 Fry the curry paste in thick coconut cream until fragrant and split.
- 2 Add the chicken and coat, then pour in the remaining coconut milk.
- 3 Simmer with bamboo, fish sauce, and sugar until the chicken is tender.
- 4 Finish with Thai basil and serve over jasmine rice.
