Mediterranean Grain Bowl
Herbed farro with roasted vegetables, chickpeas, and a lemon-tahini drizzle.

Ingredients
- 1.5 cups farro
- 1 can chickpeas
- 1 zucchini
- 1 red pepper
- 3 tbsp tahini
- 1 lemon
- 2 tbsp olive oil
- Parsley and mint
Method
- 1 Cook the farro until tender and chewy, then cool slightly.
- 2 Roast the vegetables and chickpeas with oil until caramelized.
- 3 Whisk tahini with lemon and water into a pourable dressing.
- 4 Toss everything with herbs and finish with the tahini drizzle.
