Grilled Ribeye

A thick ribeye seared over high heat and basted with garlic-thyme butter.

Ingredients

  • 2 thick ribeye steaks
  • 3 tbsp butter
  • 4 cloves garlic
  • 4 sprigs thyme
  • 2 tbsp oil
  • Coarse salt
  • Black pepper
  • Flaky salt to finish

Method

  1. 1 Salt the steaks an hour ahead and bring to room temperature.
  2. 2 Sear in a smoking-hot pan or grill until a deep crust forms.
  3. 3 Add butter, garlic, and thyme and baste continuously.
  4. 4 Rest 10 minutes, then slice and finish with flaky salt.
