Ingredients

  • 2 strip steaks
  • 3 tbsp cracked peppercorns
  • 2 tbsp butter
  • 1/4 cup brandy
  • 1/2 cup cream
  • 1 shallot
  • 1 tsp Dijon
  • Salt

Method

  1. 1 Press the cracked pepper firmly onto the salted steaks.
  2. 2 Sear in butter to your preferred doneness and rest.
  3. 3 Soften the shallot, then deglaze with brandy off the heat.
  4. 4 Stir in cream and Dijon, reduce, and spoon over the steaks.
