Steak au Poivre
Peppercorn-crusted steak with a brandy-cream pan sauce.

Ingredients
- 2 strip steaks
- 3 tbsp cracked peppercorns
- 2 tbsp butter
- 1/4 cup brandy
- 1/2 cup cream
- 1 shallot
- 1 tsp Dijon
- Salt
Method
- 1 Press the cracked pepper firmly onto the salted steaks.
- 2 Sear in butter to your preferred doneness and rest.
- 3 Soften the shallot, then deglaze with brandy off the heat.
- 4 Stir in cream and Dijon, reduce, and spoon over the steaks.
