Beef Bourguignon
Beef braised in red wine with mushrooms, pearl onions, and smoky bacon.

Ingredients
- 3 lb beef chuck
- 6 oz bacon
- 1 bottle red wine
- 1 lb mushrooms
- 1 cup pearl onions
- 2 tbsp tomato paste
- 3 carrots
- Fresh thyme
Method
- 1 Render the bacon and sear the floured beef in the fat.
- 2 Add tomato paste and wine and bring to a simmer.
- 3 Braise covered at 300F for two hours until tender.
- 4 Saute the mushrooms and onions and fold in before serving.
