Ingredients

  • 3 lb beef chuck
  • 6 oz bacon
  • 1 bottle red wine
  • 1 lb mushrooms
  • 1 cup pearl onions
  • 2 tbsp tomato paste
  • 3 carrots
  • Fresh thyme

Method

  1. 1 Render the bacon and sear the floured beef in the fat.
  2. 2 Add tomato paste and wine and bring to a simmer.
  3. 3 Braise covered at 300F for two hours until tender.
  4. 4 Saute the mushrooms and onions and fold in before serving.
