Avocado Toast with Poached Egg
Smashed avocado on griddled sourdough crowned with a soft poached egg and chili.

Ingredients
- 2 slices sourdough
- 1 ripe avocado
- 2 eggs
- 1 lemon
- Red pepper flakes
- Olive oil
- Sea salt
- Microgreens
Method
- 1 Toast the sourdough in olive oil until deeply golden.
- 2 Smash the avocado with lemon, salt, and pepper.
- 3 Poach the eggs in barely simmering water for three minutes.
- 4 Top each toast with avocado, an egg, chili, and microgreens.
