Eggs Benedict
English muffins layered with Canadian bacon, poached eggs, and silky hollandaise.

Ingredients
- 2 English muffins
- 4 slices Canadian bacon
- 4 eggs
- 3 egg yolks
- 1 stick butter
- 1 lemon
- Cayenne
- Chives
Method
- 1 Whisk yolks and lemon over a double boiler, streaming in melted butter.
- 2 Toast the muffins and crisp the bacon.
- 3 Poach the eggs for three minutes until the whites just set.
- 4 Stack bacon, egg, and hollandaise and finish with chives and cayenne.
