  • 4 slices Canadian bacon
  • 4 eggs
  • 3 egg yolks
  • 1 stick butter
  • 1 lemon
  • Cayenne
  • Chives

Method

  1. 1 Whisk yolks and lemon over a double boiler, streaming in melted butter.
  2. 2 Toast the muffins and crisp the bacon.
